In many a French restaurant, the strong cheeses are left to fight it out amongst themselves after the staff have all gone home at night, a bit like rutting stags.  The Big Cheese can be Cock of the Cheeseboard for many seasons, and he has the pick of the younger, fresher cheeses - a sort of Droit de Fromage.  The older, weaker and injured cheeses get fed to the customers next day...
